Tuna with Wasabi, Crème Fraiche and Pickled Salad
Ingredients
- 1 tuna steak
- 4 Soy Sauce
- 0.50 tsp wasabi paste
- 3 tsbp crème fraiche
- radish
- 1 large cucumber
- 3 tblsp sesame seed oil
- 1 tblsp honey
- 1 tblsp mint
- 0.50 cup rice vinegar
- 0.50 cup caster sugar
- star anise
- sesame seeds- enough to coat
- coriander- bunch
- mint-bunch
- 1 tblsp Mirin
Method
- Mix sesame seed oil, honey, soy sauce and mirin into bowl
- Put tuna steak into sauce to marinate for approx 10 mins
- Slice the cucumber and radish and set aside
- Mix the sugar and rice, vinegar and star anise in saucepan and bring to the boil.
- Reduce by at least half and then cool
- Coat the cucumber and radish in sauce, add coriander and mint
- Mix the wasabi and crème fraiche together
- Remove the tuna and coat in sesame seeds.
- Panfry for a few minutes on each side just searing the tuna
- Remove from heat, plate
