Tuna with Wasabi, Crème Fraiche and Pickled Salad

Ingredients

  • 1 tuna steak
  • 4 Soy Sauce
  • 0.50 tsp wasabi paste
  • 3 tsbp crème fraiche
  • radish
  • 1 large cucumber
  • 3 tblsp sesame seed oil
  • 1 tblsp honey
  • 1 tblsp mint
  • 0.50 cup rice vinegar
  • 0.50 cup caster sugar
  • star anise
  • sesame seeds- enough to coat
  • coriander- bunch
  • mint-bunch
  • 1 tblsp Mirin

 

Method

  1. Mix sesame seed oil, honey, soy sauce and mirin into bowl
  2. Put tuna steak into sauce to marinate for approx 10 mins
  3. Slice the cucumber and radish and set aside
  4. Mix the sugar and rice, vinegar and star anise in saucepan and bring to the boil.
  5. Reduce by at least half and then cool
  6. Coat the cucumber and radish in sauce, add coriander and mint
  7. Mix the wasabi and crème fraiche together
  8. Remove the tuna and coat in sesame seeds.
  9. Panfry for a few minutes on each side just searing the tuna
  10. Remove from heat, plate
