Salmon Pthivier

Ingredients

  • 50 g 2 oz butter, softened
  • 2 tblsp chopped fresh parsley
  • rind of ½ a lemon
  • black pepper
  • 1 tblsp lemon juice
  • salmon pithivier
  • 300 g 12 oz salmon fillet boned and skin removed
  • salt and freshly ground black pepper
  • 225 g 8 oz fresh baby spinach, washed and dried well1 pk ready-made puff pastry
  • plain flour, for dusting
  • 1 egg, beaten

Bite's Lobster Burger

Ingredients

  • ciabatta roll
  • 0.50 cooked lobster (shelled)
  • baby gem lettuce leaves
  • crispy red onion rings
  • pickled cucumber
  • vine tomatoes
  • crispy pancetta
  • raclette cheese
  • truffle oil or truffle mayonnaise
  • samphire mayonnaise:
  • 2 egg yolks
  • 150 ml olive oil
  • 150 ml sunflower oil
  • 1 cup samphire
  • lemon juice, to taste
  • sugar, salt and pepper (to taste)

Lemony Turkey Kebabs

Ingredients

  • 1 kg turkey mince
  • 2 shallots finely diced
  • 2 cloves garlic, peeled and crushed
  • 1/2 red pepper finely diced
  • 1/2 red chilli, de-seeded and finely diced (optional)
  • handful fresh lemon thyme, washed and chopped
  • handful fresh curly parsley, washed and chopped
  • zest of 1 lemon
  • freshly ground black pepper
  • 1 egg
  • pitta bread
For the Winter salad
  • 1/2 crisp white cabbage
  • 1 large fennel bulb
  • 2 sticks celery
  • 3 white radishes
  • 1 apple, peeled, cored and chopped
  • 2 tblsp olive oil
  • 1 tblsp fresh lemon juice
  • freshly ground black pepper
  • 1 handful fresh parsley, chopped

White bread recipes


Ingredients

  • 500g/1lb 1oz strong white bread flour, plus a little extra flour for finishing
  • 40g/1½oz soft butter
  • 12g/2 sachets fast-action dried yeast
  • 2 tsp salt
  • about 300ml/10¾fl oz tepid water (warm not cold – about body temperature)
  • a little olive or sunflower oil
