Pizza with a Minted Tahini Sauce

Ingredients: Crust:
  • 2 1/2 to 3c. white spelt flour
  • 1T each active dry yeast and olive oil
  • 1tsp sugar
  • 1c. warm water

Pizza with White Garlic Sauce

Ingredients: Crust:
  • 1/2c. water
  • 1 1/2 tsp active yeast
  • 2tsp raw sugar
  • 1/2c. wheat flour
  • 1/4c. bread flour
  • 1/4c. semolina (cream of wheat)
  • 1/2tsp sea salt
  • 1T olive oil
  • 2-3T bread flour, for dusting

Grilled Salmon with Tomato Dressing

Ingredients

  • 6 skinless salmon fillets (175g, pin bones removed)
  • olive oil, for brushing
  • juice of 1/2 lemon
  • 3 ripe avocadoes
  • 25 g wild rocket
  • for the dressing:
  • 200 ml olive oil
  • 12 semi sun-dried tomatoes in oil (drained and roughly chopped)
  • 1 tsp fresh lemon juice
  • pinch of chilli powder
  • 3 fresh basil leaves
  • salt and freshly ground black pepper

Chicken with Hummus Easter Main Dish


Ingredients

Ingredients for potato bake:
  • 8 chicken thighs
  • 1 large sweet potato (peeled and diced)
  • 1.50 red onions (peeled and cut into wedges)
  • 1 inch fresh ginger (chopped)

  • 1 tblsp honey

Spare Ribs Barbeque

Ingredients

  • 3 kg (6.5lb) baby back pork ribs
  • 2 onions, peeled and sliced in half
  • 1 bulb of garlic, unpeeled and top sliced off
  • a generous pinch of sea salt
  • for the barbecue sauce:
  • 60 g (2½oz) demerara sugar
  • 4 tblsp dark soy sauce
  • 4 tblsp tomato ketchup
  • 4 tblsp honey
  • 4 garlic cloves, peeled and finely chopped
  • 1 tblsp dried english mustard
  • 2 tsp tabasco sauce

Chicken with homemade peanut sauce

Ingredients

Homemade Peanut Sauce

  • 1-2 Tbs tamarind paste from a jar
  • 2/3 cup brown sugar
  • 1 tsp salt + more to balance at very end
  • 1L water
  • 2 Tbs lime juice + more to balance at very end
  • 500g salted, roasted, crushed peanuts

Caponata

Ingredients

  • 2 medium aubergines, cut into 2cm cubes
  • salt and freshly ground black pepper
  • extra virgin olive oil
  • 2 large onions, chopped
  • 5 celery stalks (trimmed and cut into 1.5cm pieces)
  • 500 ml tomato sauce
  • 65 g capers, rinsed
  • 50 ml white wine vinegar
  • sugar, to taste
  • 125 g green olives
  • crusty bread, to serve
  • 50 ml olive oil, extra.virgin
  • 3 garlic cloves, finely chopped
  • 1 tsp tomato purée
  • 2 400g cans plum tomatoes, crushed
