Fried Steak

Ingredients

  • 1 1/2 cups self-rising white cornmeal mix
  • 1 1/2 tablespoons chopped fresh oregano
  • 3/4 teaspoon pepper
  • 4 to 6 cubed steaks (about 1 1/2 lb.)
  • 1 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups low-fat buttermilk (or whole milk)
  • 1 slice bacon 
  • 2 cups vegetable oil

Christmas Ham


Ingredients

Whole ham on the bone (approx 7 ½ lb/3.5kg)
  • 4 tblsp irish mist
  • 50 g brown sugar
  • 4 tblsp irish whiskey marmalade
  • 18 cloves

Bacon and Cabbage with Mustard Sauce


Ingredients

  • 1.50 kg loin of bacon
  • 1 carrot
  • 2 celery sticks
  • 2 leeks
  • 1 tsp peppercorns
  • topping
  • 1 tblsp mustard
  • 0.50 tblsp brown sugar
  • 1 tblsp oven-dried breadcrumbs
  • knob of butter
  • mustard sauce
  • 50 g butter
  • 25 g flour
  • 1 tblsp mustard
  • 250 ml mixture cooking liquid and cream (½ & ½)
  • 1 kg cabbage (finely sliced)

Irish Bacon and Cabbage

  • 700 g back bacon (one piece)

  • 1 head of cabbage
  • 60 g butter
  • 3 tblsp white flour (heaped)

  • 4 slices bacon, cut into 1/4 inch pieces
  • 3 cloves garlic, minced
  • 1/2 whole large onion ,chopped

Chicken casserole with Bulmers

Ingredients

  • 12 rindless streaky bacon rashers
  • 12 skinless and boneless chicken thighs
  • 3 tblsp rapeseed oil
  • 2 onions (cut into wedges)
  • 2 sweet potatoes or 1 small butternut squash (peeled and cut into cubes)
  • 2 garlic cloves (crushed)
  • 2 tblsp plain flour
  • 2 tblsp crab apple jelly
  • 330 ml bottle of bulmers
  • 300 ml chicken stock
  • 1 tblsp chopped fresh flat-leaf parsley
  • 1 tblsp toasted flaked almonds
  • salt and freshly ground black pepper
  • mashed potatoes, to serve

Braised Beef Cheek with Smoked Bacon

Ingredients

  • 4 olive oil
  • 250 g (9oz) pieces beef cheek, well trimmed (per person)
  • 2 carrots, peeled and cut into chunks
  • 1 onion, peeled and roughly chopped
  • 2 garlic cloves, peeled and crushed
  • 600 ml (1 pint) red wine
  • 1.20 l (2 pints) beef stock
  • 2 thyme sprigs
  • 2 rosemary sprigs
  • 150 g (5oz) piece of smoked bacon, rind removed and diced
  • 150 g (5oz) button mushrooms, wiped clean
  • maldon sea salt and freshly ground white pepper
  • chopped flat-leaf parsley, to garnish

Free Range Turkey with smoked bacon and sage butter


Ingredients


  • 1 11-14 lb turkey
  • 2 lb butter
  • 500 g chopped rogan's whiskey oak smoked bacon – rogans
  • 1 bunch of chopped fresh sage
For the trivet
  • 2 onions
  • 1 head of celery
  • 3-4 carrots
  • 4 sprigs of rosemary
  • 4-5 sprigs of thyme
  • 2 l water

Chicken Breast Wrapped in Bacon

Ingredients

  • 2 medium chicken breast of boned chicken
  • 4 streaky rashers
  • olive oil
  • butter
  • spinach
  • salt and pepper to taste
  • 2 oz whiskey for, flame
  • 1 lb baby potatoes
  • 8 oz diced carrots
  • 8 oz diced parsnip
  • for the stuffing:
  • 1 oz butter
  • 1 cup bread crumbs
  • 3 oz leek
  • ½ teaspoon mixed herbs
  • dash of orange juice
  • grated orange rind
  • for the sauce:
  • 4 oz port
  • boil gently to reduce
  • add lamb and veg stock
  • salt and pepper to taste

Glazed Pork Steak with Butter Beans, Peas & Bacon


Ingredients


  • 0.50 a pork steak
  • 2 tblsp olive oil
  • 15 g butter
  • a bunch of mint leaves
  • 1 tblsp caster sugar
  • 15 ml white wine vinegar
  • 25 ml extra virgin olive oil
  • pinch of salt
  • 2 tblsp tomato purée
  • 1 tblsp soy sauce
  • 1 tblsp red wine vinegar
  • 1 tblsp honey
  • 100 g butter beans (tinned)
  • 100 g garden peas (tinned)
  • 2 garlic cloves
  • 1 tblsp créme fraiche
  • 1-2 tbsp olive oil
  • 70 g smokey bacon bits/ lardons, or full rashers to be chopped

Smoked Back Bacon with Boxty, Red Onion and Blackcurrant Jam and Steamed Greens

Ingredients

  • reduced salt back bacon joint
  • 1 packet steam fresh frozen broccoli, pea and sugar snaps, cooked as per pack instructions
  • red onion and blackcurrant jam:
  • 3 red onions (cut in half and finely sliced)
  • 1 tin blackcurrants (drained and half of juice reserved)
  • 3 tblsp soy sauce
  • 2 pinches sea salt
  • 3 pinches nutmeg
  • 2 tblsp demerara sugar
  • 2 tblsp balsamic vinegar
  • 1 tblsp sunflower oil
  • boxty (makes 8 cakes):
  • 40 g scallions, finely chopped (3-4 times)
  • 300 g grated raw potato
  • 300 g baked potato (bake in oven at 200°c/gas 6 for 1 hour. scoop out insides and mash.)
  • 100 g flour
  • 1 tsp freshly ground black pepper
  • 1 tsp sea salt
  • 10-30 ml milk
