Guinness and Greenbean Casserole

Ingredients

  • kg pounds fresh green beans, ends cut off
  • 4 slices bacon, cut into 1/4 inch pieces
  • 3 cloves garlic, minced
  • 1/2 whole large onion ,chopped
  • 2 oz butter
  • 2 oz flour
  • 500 ml whole milk
  • 100 ml guinness
  • 100 ml cream
  • salt & pepper to taste
  • pinch cayenne pepper
  • 240 g grated red cheddar cheese
  • 4 oz roast red pepper
  • 240 g bread crumbs

Herb Crusted Rack of Lamb with Seasonal Vegetables

Ingredients

For the lamb
  • 1 rack of lamb (4 bones)
  • sea salt and freshly ground black pepper
  • 0.50 tblsp dijon mustard
For the herb crust
  • 50 g white breadcrumbs
  • 1 tblsp fresh parsley leaves
  • 1 tblsp fresh basil leaves
  • 1 tsp thyme leaves
  • 1 tsp rosemary leaves
  • 0.50 clove garlic
  • sunflower oil (if required)

Glazed Pork Steak with Butter Beans, Peas & Bacon


Ingredients


  • 0.50 a pork steak
  • 2 tblsp olive oil
  • 15 g butter
  • a bunch of mint leaves
  • 1 tblsp caster sugar
  • 15 ml white wine vinegar
  • 25 ml extra virgin olive oil
  • pinch of salt
  • 2 tblsp tomato purée
  • 1 tblsp soy sauce
  • 1 tblsp red wine vinegar
  • 1 tblsp honey
  • 100 g butter beans (tinned)
  • 100 g garden peas (tinned)
  • 2 garlic cloves
  • 1 tblsp créme fraiche
  • 1-2 tbsp olive oil
  • 70 g smokey bacon bits/ lardons, or full rashers to be chopped

Tea Smoked Duck Breast With Baby Beetroot

Ingredients

  • 2 magret duck breasts
  • 1 kg baby beetroot
  • 300 g french beans
  • 100 g walnut
  • 1 block parmesan
  • 200 ml beetroot juice
  • 2 lemon
  • 1 bulb garlic
  • 3 sprigs thyme
  • olive oil
  • 2 tblsp honey
  • 2 tblsp white wine vinegar
  • 2 tblsp port ruby
  • handful rocket leaves, purple endive and pea shoots for garnish
 

Pork meatballs with tomato, chorizo and white bean stew

Ingredients

For the tomato sauce
  • 1 kg (2.25 lb) tin chopped tomatoes
  • 100-150ml (3.5-5fl oz) olive oil
  • 4 large shallots, peeled, finely chopped
  • 4 garlic cloves, crushed to a paste
  • sprig fresh thyme, leaves only
For the stew
  • 2 tblsp olive oil
  • 2 carrots, peeled, chopped
  • 1 red pepper, chopped
  • 4 garlic cloves, peeled, chopped
  • 1 onion, peeled, chopped
  • pinch dried chilli flakes
  • 175 ml (6fl oz) red wine (optional)
  • 1.50 tsp smoked paprika
  • 750 g (1.5 lb) pork mince
  • 2 tsp crushed fennel seeds
  • 4 tsp ground cumin
  • 2 medium cooking chorizos, chopped
  • 400 g (14fl oz) canned white beans (such as butter beans or haricot beans), drained, rinsed
