Beef with Leek and Potato Mash

Ingredients

  • 35 kg rib of beef off bone
  • salt
  • pepper
  • cumin
  • onion
  • rooster potatoes
  • leeks butter
  • milk

 

Method

  1. Season beef and place on a bed of sliced onions + garlic. Place in oven at 180
  2. Peel and cut potatoes into 1/8. Boil in water seasoned with salt
  3. Put potatoes through a ricer and mix with butter, salt, pepper and boiled milk
  4. Cut and sweat the leeks. Put this through the potatoes
  5. Place the juice from meat in saucepan with red wine , salt and pepper and reduce
  6. Allow meat to rest for one hour. Cook for 1 hour 50 mins for medium.
  7. Ready to serve
