Gluten - free Crunchy Chicken

Ingredients

  • 2 chicken breasts
  • 2 eggs beaten
  • 1 tblsp milk
  • 200 g kelkin gluten free cornflakes (crushed, around 1 teacup)

Method

  1. Mix the egg and milk together in a shallow dish.
  2. In another shallow dish spread out the crushed gluten free cornflakes.
  3. Firstly dip the chicken into the egg mix and then coat with the cornflakes.
  4. The fillets can then be fried using a little spray olive oil.
  5. Serve with some roast vegetables.
